Ingredients:
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 head cauliflower, chopped into florets
- 2 cups broccoli florets
- 1 can (15 oz) white beans, drained and rinsed (such as cannellini or great northern beans)
- 4 cups vegetable or chicken broth
- 1 cup unsweetened almond milk (or regular milk)
- Salt and pepper, to taste
- 1/2 teaspoon dried thyme
- Fresh parsley or rosemary, for garnish
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened, about 5 minutes.
- Add the cauliflower, broccoli, and vegetable broth, and bring the soup to a boil. Reduce the heat and simmer for about 20 minutes, until the vegetables are tender.
- Stir in the white beans and cook for another 5 minutes.
- Use an immersion blender to blend the soup until smooth or to your preferred consistency. Alternatively, blend part of the soup and return it to the pot.
- Stir in the almond milk, dried thyme, and season with salt and pepper.
- Serve hot, garnished with fresh parsley or rosemary.
