  • For the crumble topping:
    • 1/4 cup sugar
    • 1/4 cup all-purpose flour
    • 1/4 cup rolled oats
    • 2 tablespoons cold butter, cubed

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. In a separate large bowl, beat the butter and eggs until light and fluffy. Add the milk and vanilla extract, then mix until combined.
  4. Slowly add the dry ingredients to the wet ingredients, stirring just until combined. Gently fold in the diced peaches.
  5. For the crumble topping, combine the sugar, flour, oats, and cubed butter in a small bowl. Use a pastry cutter or your fingers to combine the mixture into a crumbly texture.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full. Sprinkle the crumble topping evenly over each muffin.
  7. Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool slightly before serving.
