- 2 cups fresh pineapple chunks
- 1 cup coconut milk (full-fat or light)

Instructions
- In a blender, combine the pineapple chunks, coconut milk, honey (if using), and vanilla extract. Blend until smooth.
- Pour the mixture into popsicle molds, filling each mold about three-quarters full.
- If desired, sprinkle a small amount of shredded coconut into each mold for added texture and flavor.
- Insert sticks into the molds and freeze for at least 4 hours, or until solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds before gently pulling the popsicles out.
