Instructions:
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
- In a skillet, cook the ground beef or lamb over medium heat until browned. Drain any excess fat.
- Add the chopped onion and garlic to the skillet and cook until softened.
- Stir in the diced tomatoes, tomato paste, cooked rice, fresh parsley, oregano, salt, and black pepper. Cook for 5 minutes until well combined and heated through.
- Stuff each bell pepper with the meat and rice mixture, packing it in gently.
- Sprinkle crumbled feta cheese on top of each stuffed pepper.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the peppers are tender.
- Remove the foil and bake for an additional 5-10 minutes, until the tops are golden.
