  • ¼ cup Irish cream liqueur (such as Baileys)
  • 1 cup sour cream
  • 2 tbsp sugar (for topping)

Instructions:

  1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the digestive biscuit crumbs and melted butter. Press the mixture into the bottom of the springform pan to form an even crust. Bake for 10 minutes, then remove and set aside.
  3. In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and Irish cream liqueur.
  4. Pour the cream cheese mixture over the prepared crust and bake for 50-60 minutes, or until the center is set and the edges are lightly golden.
  5. Remove from the oven and allow to cool in the pan for 10 minutes. Then, spread the sour cream evenly over the top and return to the oven for 10 minutes.
  6. Once cooled, refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  7. Before serving, drizzle with 2 tbsp Irish cream liqueur and sprinkle with sugar.
