Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 24 mini peanut butter cups, unwrapped

Instructions:

  4. Roll dough into 1-inch balls and place them on the prepared baking sheets. Flatten each ball slightly with the back of a spoon.
  5. Bake for 8-10 minutes, or until edges are golden and cookies are set. Remove from the oven and immediately press a mini peanut butter cup into the center of each cookie.
  6. Let cool completely on wire racks.
