Directions:
- Preheat your oven to 375°F (190°C) and grease a muffin tin with a bit of olive oil.
- Heat olive oil in a large skillet over medium heat and add the onion, carrot, and garlic. Cook for 4-5 minutes until softened.
- Add the ground lamb or beef to the skillet and cook until browned. Stir in the tomato paste, Worcestershire sauce, thyme, and beef broth. Let it simmer for 10 minutes, then add the frozen peas and season with salt and pepper.
- Spoon the meat mixture into the muffin tin, filling each cup halfway.
- Top each mini shepherd’s pie with a generous spoonful of mashed potatoes, spreading them evenly over the meat mixture.
- Bake in the oven for 15-20 minutes, or until the tops of the pies are golden and crispy.
- Let the pies cool slightly before removing them from the muffin tin and serving.
