  1. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain excess fat if needed.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in the zucchini, bell pepper, and cherry tomatoes. Cook for 4–5 minutes until the vegetables are just tender.
  4. Add the spinach, paprika, and cumin. Cook for an additional 2 minutes until the spinach is wilted and the flavors are combined. Season with salt and pepper.
  5. Garnish with fresh parsley and serve as is or with a side of gluten-free bread or rice.
