Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 cup red bell pepper, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup onions, sliced
  • 1/4 cup white vinegar
  • 3 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1/2 tsp cornstarch mixed with 2 tbsp water (optional for thickening)
  • 1/4 tsp chili flakes (optional, for heat)
  • Cooked rice, for serving

Instructions

  1. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 4-5 minutes until browned and cooked through. Remove and set aside.
  2. In the same pan, add the remaining oil and stir-fry the bell pepper, pineapple, and onions for 2-3 minutes until they are tender but still vibrant.
  3. Mix the white vinegar, brown sugar, soy sauce, and chili flakes (if using) in a bowl. Pour the sauce over the vegetables and add the chicken back to the pan. Stir well and cook for another 1-2 minutes, adding the cornstarch slurry if you prefer a thicker sauce.
  4. Serve over rice for a refreshing and satisfying Sunday meal.
