  • 1/2 teaspoon ground cinnamon

  • 1/2 cup coconut milk
  • Juice of 1 orange

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and ginger, sautéing until softened, about 5 minutes.
  2. Stir in the coriander, cinnamon, and cayenne pepper, cooking for 1 minute until fragrant.
  3. Add the carrots and vegetable broth, bringing to a boil. Reduce the heat and simmer for 20 minutes, or until the carrots are tender.
  4. Use an immersion blender to puree the soup until smooth. Stir in the coconut milk and orange juice.
  5. Season with salt and pepper, and serve warm, garnished with fresh cilantro.
