Acorn Squash and Quinoa Salad

  • 2 acorn squash

  • 1/4 cup feta cheese, crumbled
  • 1/4 cup chopped fresh basil

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half and scoop out the seeds. Place the halves cut-side up on a baking sheet and roast for 30-35 minutes, or until tender.
  3. Meanwhile, cook the quinoa according to package instructions, using water or vegetable broth. Let it cool.
  4. In a large bowl, combine the cooked quinoa, diced red bell pepper, cherry tomatoes, red onion, feta cheese, and fresh basil.
  5. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  6. Once the acorn squash is roasted and cooled slightly, scoop the flesh into the quinoa mixture and gently toss to combine.
  7. Drizzle the vinaigrette over the salad and toss to coat evenly.
  8. Serve the salad at room temperature or chilled.
