Ingredients
- 1 lb (450g) beef stew meat
- 1 cup (200g) red lentils
- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups (1 liter) beef stock
- 1 tsp dried oregano
- 1 tsp dried rosemary
- 1/2 tsp cinnamon
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
- Crumbled feta cheese for garnish
Instructions
- Heat olive oil in a large pot. Brown the beef stew meat on all sides, then remove and set aside.
- Sauté onion and garlic in the same pot until softened and fragrant.
- Add the diced tomatoes, beef stock, lentils, oregano, rosemary, and cinnamon. Stir well to combine.
- Bring to a boil, then reduce the heat and simmer for 40-45 minutes, until the beef is tender and lentils are cooked.
- Stir in lemon juice and season with salt and pepper.
- Serve hot, garnished with fresh parsley and crumbled feta cheese.
