  • 1 cup cold water
  • 1 container (8 oz) whipped topping, thawed

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, combine the Betty Crocker Lemon Cake Mix, water, vegetable oil, and eggs. Beat on low speed for 30 seconds, then on medium speed for 2 minutes.
  3. Pour the batter into the prepared baking pan.

  5. Allow the cake to cool for 15 minutes.
  6. In a medium bowl, dissolve the lemon gelatin in boiling water. Stir in the cold water.
  7. Using the handle of a wooden spoon, poke holes all over the top of the cake.
  8. Pour the gelatin mixture evenly over the cake, ensuring it seeps into the holes.
  9. Refrigerate the cake for at least 2 hours.
  10. Spread the whipped topping evenly over the chilled cake.
  11. Garnish with lemon zest before serving, if desired.
