Instructions:
- In a large bowl, combine the all-purpose flour, salt, sugar, and oil. Gradually add water and knead into a soft, smooth dough.
- Cover the dough with a damp cloth and let it rest for at least 1 hour.
- Divide the dough into small balls. Roll each ball out thinly, then brush the surface with oil or ghee. Fold the dough into layers by pleating it, then coil it into a circle and roll it out again.
- Heat a tawa or skillet over medium heat. Cook the parotta on both sides, brushing with oil or ghee, until golden brown and crispy.
- Serve hot with curries like chicken, mutton, or vegetable kurma.
