- 1/2 cup berry juice (or any fruit juice)
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
Instructions:
- In a medium bowl, combine the mixed dried berries. Set aside.
- In the bread machine pan, add the butter, sugar, eggs, berry juice, and vanilla extract. Mix well.
- Add the flour, baking powder, baking soda, ground cinnamon, and salt to the pan. Gently fold in the mixed berries.
- Select the “Cake” or “Quick Bread” setting on your bread machine.
- Allow the bread machine to complete the baking cycle. Check for doneness by inserting a toothpick into the center of the cake. It should come out clean.
- Once done, remove the pan from the machine and let the cake cool before slicing.
