- 2 cans full-fat coconut milk
- 1/2 cup fresh mint leaves
- 1/4 cup maple syrup or agave syrup
- 1 tsp vanilla extract
- 1/2 cup dairy-free chocolate chips
- Pinch of sea salt
Instructions:
- In a saucepan, heat the coconut milk over medium heat. Once warm, add the fresh mint leaves and steep for 10 minutes.
- After steeping, remove the mint leaves and blend the coconut milk with maple syrup, vanilla extract, and sea salt until smooth.
- Refrigerate the mixture for 2-3 hours to chill.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20 minutes).
- In the last few minutes of churning, add the dairy-free chocolate chips.
- Once the ice cream has reached a soft-serve consistency, transfer it to an airtight container and freeze for 4-6 hours to firm up.
- Scoop and serve!
