Ingredients:

  • 4 large bell peppers, tops removed and seeds discarded
  • 1 lb ground beef or turkey
  • 1 tbsp Cajun seasoning
  • 1/2 cup cooked rice
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add the ground beef or turkey and cook until browned, breaking it up as it cooks.
  3. Add the diced onion and green bell pepper to the skillet, cooking for 3-4 minutes until softened. Stir in the Cajun seasoning, cooked rice, and diced tomatoes. Simmer for 5-7 minutes, allowing the flavors to meld together.
  4. Season the mixture with salt and pepper to taste.
  5. Stuff each bell pepper with the meat and rice mixture, pressing down gently to pack it in.
  6. Place the stuffed peppers in a baking dish and cover with foil. Bake for 25 minutes.
  7. Remove the foil, sprinkle shredded cheddar cheese on top of each stuffed pepper, and bake for an additional 5 minutes, until the cheese is melted and bubbly.
  8. Garnish with fresh parsley and serve.
