Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft, about 5 minutes. Stir in the minced garlic and cook for another minute.
  2. Add the arborio rice, stirring to coat in the oil and toast slightly, about 2-3 minutes.
  3. If using, pour in the white wine and cook until absorbed. Begin adding the warmed vegetable broth, one ladle at a time, stirring frequently. Allow each ladle to be absorbed before adding the next.
  4. In a separate pan, sauté the sliced mushrooms until tender and golden, then add them to the risotto during the last few minutes of cooking.
  5. Once the rice is creamy and al dente, remove from heat and stir in the grated Parmesan cheese. Using your Cuisinart immersion blender, blend the risotto gently for a creamier texture (optional).
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
