  • 1/4 teaspoon nutmeg
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 2 flax eggs (2 tablespoons flaxseed meal + 5 tablespoons water)
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a small bowl, prepare the flax eggs by combining flaxseed meal and water. Let sit for 5 minutes.
  3. In a large bowl, mix flour, baking powder, baking soda, cinnamon, and nutmeg.
  4. In another bowl, whisk together mashed sweet potato, maple syrup, coconut oil, flax eggs, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fill muffin liners 3/4 full and bake for 18–20 minutes.
