  • 2 turnips, peeled and chopped
  • 3 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in the Dutch oven over medium-high heat. Brown the chicken thighs on both sides, about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté onions and garlic until softened, about 5 minutes.
  3. Add parsnips, turnips, and potatoes, cooking for 3-4 minutes.
  4. Pour in chicken broth, thyme, and bay leaves. Return chicken to the pot. Bring to a simmer.
  5. Cover and cook for 30-40 minutes, until the chicken is cooked through and the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.
