- 1 ¼ cups sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 ½ cups mixed dried fruits (raisins, currants, sultanas)
- ½ cup chopped walnuts
- ½ cup Irish whiskey
- 1 teaspoon vanilla extract
- ½ cup whiskey syrup (see instructions)
For Whiskey Syrup:
- ¼ cup sugar
- ¼ cup water
- 2 tablespoons Irish whiskey
Instructions:
- Preheat the oven to 325°F (160°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, mix the flour, baking powder, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the wet mixture, followed by the dried fruit and walnuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the whiskey syrup by simmering sugar and water in a small pan until the sugar dissolves. Stir in the whiskey and remove from heat.
- When the cake is done, remove it from the oven and immediately pour the whiskey syrup over the hot cake.
- Let the cake cool completely before serving.
