Ingredients:
- 1 can (14 oz) Eagle Brand sweetened condensed milk
- 2 cups heavy whipping cream
- 2 ripe bananas, mashed
- 1/4 cup dark rum
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
Instructions:
- In a saucepan over medium heat, combine the brown sugar, cinnamon, and rum. Stir until the sugar dissolves and the mixture becomes syrupy, about 3–4 minutes. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the Eagle Brand milk and the mashed bananas, stirring until smooth.
- In a separate bowl, whip the heavy cream to stiff peaks.
- Gently fold the whipped cream into the banana mixture.
- Pour in the cooled caramel rum mixture and vanilla extract, stirring gently to combine.
- Transfer the ice cream base into a freezer-safe container and freeze for 6–8 hours or until firm.
- Scoop and serve, enjoying the rich caramelized banana flavor, enhanced by the slight rum and cinnamon kick.
