  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. In a large pot over the campfire, heat the olive oil. Add the beef stew meat and brown on all sides.
  2. Add the chopped onion, carrots, potatoes, and celery. Cook for 5-7 minutes until the vegetables begin to soften.
  3. Stir in the garlic and cook for another minute.
  4. Add the diced tomatoes, beef broth, Worcestershire sauce, dried thyme, and bay leaf. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1 to 1.5 hours, stirring occasionally, until the beef is tender and the flavors have melded.
  6. Remove the bay leaf before serving.
