  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, cooking until softened. Stir in the diced tomatoes, black beans, corn, chili powder, cumin, paprika, salt, and pepper. Cook for 5–7 minutes until the mixture is heated through.
  3. Add the cooked quinoa to the skillet, stirring to combine.
  4. Stuff each bell pepper with the quinoa mixture, pressing down gently to pack them.
  5. Place the stuffed peppers in the prepared baking dish and cover with foil. Bake for 25 minutes.
  6. Remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes until the cheese is melted and bubbly.
  7. Serve hot and enjoy.
