Instructions:

  1. Heat olive oil in a large pot over medium heat. Brown the lamb cubes on all sides, then remove and set aside.
  2. In the same pot, sauté the onion and garlic until softened, about 4 minutes.
  3. Add the carrots and celery, and cook for another 2 minutes.
  4. Stir in the barley, broth, thyme, and cumin. Bring to a boil, then reduce the heat to low.
  5. Return the lamb to the pot and simmer for 1.5 to 2 hours, until the lamb is tender and the barley is cooked.
  6. Season with salt and pepper to taste, and serve hot, garnished with fresh parsley.
