  • 2 tbsp instant espresso powder
  • 4 large egg yolks

Instructions:

  1. Heat milk, cream, sugar, and espresso powder until steaming.
  2. Whisk egg yolks and temper with the espresso mixture. Return to the saucepan and cook until thickened (170°F or 77°C).
  3. Strain the mixture and cool to room temperature. Refrigerate for at least 4 hours.
  4. Churn in your gelato maker and freeze for 2-4 hours before serving.
