  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together almond flour, baking soda, and salt.
  3. In another bowl, beat the eggs, maple syrup, melted coconut oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. In a small bowl, combine the cinnamon and coconut sugar for the swirl.
  6. Spoon a small amount of batter into each muffin cup, then sprinkle a bit of the cinnamon-sugar mixture on top. Add another layer of batter and a final sprinkle of the cinnamon-sugar mixture.
  7. Use a toothpick or a knife to gently swirl the cinnamon-sugar mixture through the muffin batter.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 10 minutes before transferring them to a wire rack.
