Ingredients:
- 6 large eggs
- ½ cup milk (dairy or dairy-free)
- ½ cup shredded cheddar cheese
- ¼ cup cooked spinach (or other vegetables like mushrooms or peppers)
- ¼ cup cooked bacon or sausage (optional)
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 cup gluten-free breadcrumbs (for crust)
- Olive oil spray
Instructions:
- Preheat the air fryer to 350°F (175°C).
- Lightly grease a muffin tin that fits in your air fryer basket with olive oil spray. Alternatively, you can use silicone muffin cups.
- In a large bowl, whisk together the eggs, milk, cheese, spinach, bacon or sausage (if using), garlic powder, salt, and pepper.
- Spoon the gluten-free breadcrumbs evenly into the bottom of each muffin cup to form the crust.
- Pour the egg mixture over the breadcrumbs, filling each muffin cup about ¾ full.
- Air fry for 12-15 minutes, or until the quiches are set in the center and slightly golden on top.
- Let the quiches cool for a few minutes before serving.
