Roasted Garlic and Thyme Gluten-Free Gravy

Ingredients:
- 1 head of garlic
- 2 tablespoons olive oil
- 1/4 cup finely chopped onion
- 2 tablespoons gluten-free all-purpose flour
- 2 cups chicken or vegetable broth (gluten-free)
- 1 tablespoon fresh thyme leaves
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). Cut off the top of the garlic head to expose the cloves, drizzle with olive oil, and wrap in aluminum foil. Roast for 30-40 minutes until soft and golden.
- Once the garlic is cool enough to handle, squeeze out the roasted cloves and mash them with a fork.
- In a saucepan, heat the remaining olive oil over medium heat. Add the chopped onion and sauté until softened, about 4 minutes.
- Stir in the roasted garlic mash and cook for an additional 2 minutes.
- Sprinkle in the gluten-free flour and stir to create a roux. Cook for 1-2 minutes.
- Gradually whisk in the chicken or vegetable broth, making sure the mixture is smooth and lump-free.
- Stir in the fresh thyme leaves, and allow the gravy to simmer for 5-7 minutes until it thickens.
- Taste and adjust seasoning with salt and black pepper.
- Serve the gravy warm over roasted meats, potatoes, or vegetables.
