- 1 bell pepper, diced

- 1/4 tsp saffron threads (optional)
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup frozen peas
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
Instructions
- Heat olive oil in a large skillet or paella pan over medium heat. Add onions and bell pepper, cooking until softened, about 5 minutes.
- Stir in garlic and cook for 1 more minute. Add the rice, diced tomatoes, saffron, paprika, and red pepper flakes. Stir to coat the rice in the oil and spices.
- Pour in the broth and bring to a simmer. Cover and cook for about 10 minutes, until the rice is just tender.
- Add the shrimp, mussels, clams, squid, and peas to the rice. Cover and cook for another 5-7 minutes, or until the seafood is cooked and the shells have opened.
- Remove from heat and let the paella rest for a few minutes.
- Serve with fresh parsley and lemon wedges on the side.
