This decadent chocolate mint cake is a perfect St. Patrick’s Day dessert. With layers of rich chocolate cake, creamy mint frosting, and a smooth chocolate ganache topping, this cake combines the classic pairing of chocolate and mint into a festive treat that’s both eye-catching and delicious.
Ingredients:
- 1 box Betty Crocker chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1/4 teaspoon mint extract
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Recipe:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Prepare the chocolate cake mix according to the package instructions, adding water, oil, and eggs. Mix until smooth.
- Divide the batter evenly between the prepared cake pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- While the cakes cool, make the mint frosting. Beat the softened butter until creamy, then gradually add the powdered sugar, milk, vanilla extract, and peppermint extract. Beat until smooth and fluffy.
- Once the cakes are completely cool, spread a layer of mint frosting on top of one cake. Place the second cake on top and frost the entire cake with the remaining mint frosting.
- To make the ganache, melt the chocolate chips and heavy cream in a small saucepan over low heat, stirring constantly until smooth. Pour the ganache over the top of the frosted cake, allowing it to drip down the sides.
- Refrigerate the cake for 30 minutes to set the ganache before slicing and serving.
