  • 1/2 lb crab meat (fresh or imitation)
  • 1/2 cup cooked rice
  • 1/4 cup cream cheese, softened
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup chopped scallions
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Olive oil spray

Instructions:

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly spray the peppers with olive oil and place them in a baking dish.
  2. In a large bowl, combine the chopped shrimp, crab meat, cooked rice, cream cheese, mozzarella, scallions, parsley, paprika, salt, and black pepper. Mix well.
  3. Stuff each bell pepper with the seafood mixture and top with a sprinkle of additional mozzarella cheese.
  4. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and golden.
  5. Serve warm, garnished with more parsley if desired.
