  • 1/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream, plus more for brushing
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tbsp sugar (for the strawberries)
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, granulated sugar, baking powder, baking soda, and salt. Add the cold butter and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Pour in the heavy cream and vanilla extract, mixing until just combined. Turn the dough out onto a floured surface and gently pat it down to about 1-inch thickness. Use a heart-shaped cookie cutter to cut out shortcakes and place them on the baking sheet. Brush the tops with a little heavy cream.
  4. Bake for 12-15 minutes, or until golden brown. Let cool on a wire rack.
  5. In a bowl, toss the sliced strawberries with the 2 tablespoons of sugar and let sit for 10 minutes to macerate.
  6. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  7. To assemble, split each shortcake in half, add a generous spoonful of strawberries and their juices, and top with whipped cream. Place the top half of the shortcake and garnish with additional strawberries.
