  • 4 white fish fillets (such as tilapia, cod, or catfish)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil, divided
  • 1 lemon, sliced
  • 1 lb asparagus, trimmed
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Method:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Rub the fish fillets with 1 tbsp of olive oil and sprinkle with Cajun seasoning, ensuring even coverage.
  3. Place the fish fillets on the baking sheet and lay lemon slices on top of each fillet.
  4. In a bowl, toss the asparagus with the remaining olive oil, minced garlic, salt, and black pepper. Arrange the asparagus on the baking sheet around the fish.
  5. Bake for 12-15 minutes or until the fish is cooked through and flakes easily, and the asparagus is tender-crisp.
  6. Serve the fish and asparagus together, garnished with fresh parsley.
