Beef Wellington

Ingredients:
- 2 lbs beef tenderloin, trimmed
- Salt and pepper, to taste
- 2 tbsp olive oil
- 8 oz mushrooms, finely chopped
- 4 oz pâté (optional)
- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
- 2 tbsp Dijon mustard
- Fresh thyme leaves (for garnish)
Instructions:
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper. In a large skillet, heat olive oil over high heat and sear the beef on all sides until browned (about 2-3 minutes). Remove and let it cool.
- In the same skillet, add the chopped mushrooms and cook until the moisture has evaporated and they are golden brown. Remove from heat and let cool.
- If using, spread the pâté over the cooled beef. Next, spread the mushroom mixture over the beef, then brush with Dijon mustard.
- Roll out the puff pastry on a floured surface, then wrap it around the beef tightly. Seal the edges and trim any excess pastry.
- Brush the pastry with beaten egg and score the top with a knife for decoration.
- Bake for 25-30 minutes, or until the pastry is golden brown. Let it rest for 10 minutes before slicing.
