Ingredients
  

  • 2 cups rolled oats gluten-free if needed
  • 1 cup Medjool dates pitted (about 12)
  • ¼ cup hemp hearts chia seeds, or flax meal
  • 3 tablespoons cacao powder or unsweetened cocoa
  • 1 teaspoon orange zest from 1 large orange
  • 1 teaspoon vanilla extract
  • cup fresh orange juice from zested orange
  • ¼ teaspoon salt optional
  • 2 tablespoons chocolate chips optional

Instructions
 

  • Prepare Your Ingredients: Before you start blending, gather all your ingredients in one place.
    Pit the Medjool dates and measure out the oats, hemp hearts (or chia/flax seeds), cacao powder, orange zest, vanilla, orange juice, salt, and optional chocolate chips.
    Wash and zest your orange carefully, then squeeze out fresh juice.
    Prepping everything beforehand ensures a smooth and stress-free process, so you won’t have to pause mid-recipe.
  • Blend the Dry Ingredients: Place the rolled oats, cacao powder, hemp hearts (or seeds), and salt (if using) into the bowl of a food processor.
    Pulse a few times to slightly break down the oats and evenly distribute the cacao and seeds.
    This creates a fine, uniform base that helps the bites stick together and ensures every bite has a balanced texture and flavor.
  • Add the Sticky Ingredients: Add the pitted dates, orange zest, orange juice, and vanilla extract to the processed dry ingredients.
    Pulse the food processor in short bursts until the mixture begins to come together.
    Scrape down the sides occasionally to ensure everything blends evenly.
    The mixture should be sticky, slightly tacky, and hold together when pressed—if it’s too dry, add a tiny splash more orange juice.
  • Incorporate Optional Chocolate Chips: If you like a little extra indulgence, fold in chocolate chips using the pulse function or by hand after blending.
    This step ensures the chocolate is evenly distributed without over-processing, preserving the small pockets of melty chocolate that make these bites extra special.
  • Test the Dough Consistency: Wet your hands with a small amount of water to prevent sticking.
    Take a small portion of the mixture and squeeze it together—if it holds its shape, you’re ready to form the bites.
    If it crumbles, add a teaspoon of orange juice at a time until the dough binds.
    The dough should be pliable, sticky, and easy to shape.
  • Shape the Energy Bites: Using your damp hands, roll the mixture into 1½-inch balls.
    Press and squeeze gently to ensure each bite holds its shape and the ingredients stick together.
    Place the finished bites on a clean plate or tray, leaving a small gap between each ball.
    Forming the bites with your hands allows you to control size, density, and ensures even texture in every bite.
  • Chill and Set: Transfer the shaped bites into an airtight container and refrigerate for at least 10 minutes.
