Ingredients
  

  • 1 cup 200g almond butter
  • ½ cup 50–75g almond flour
  • 8 drops stevia or equivalent to 2 tsp sugar
  • 2 tbsp sugar-free syrup
  • 1 tsp cinnamon optional
  • 2.3 oz 70g sugar-free chocolate (or 90% cocoa solids / unsweetened chocolate)

Instructions
 

  • Prepare Your Workspace: Before beginning, gather all ingredients and tools to make the process seamless.
    You will need almond butter, almond flour, sweetener, sugar-free syrup, optional cinnamon, and chocolate for coating.
    Equip yourself with a mixing bowl, measuring cups, a spoon, a microwave-safe bowl or double boiler, parchment paper, and a baking sheet.
    Having everything ready ensures efficiency and smooth preparation.
  • Mix Almond Butter and Sweeteners: Place 1 cup (200g) of almond butter into a large mixing bowl.
    Add 8 drops of stevia or your chosen sweetener and 2 tablespoons of sugar-free syrup.
    Stir thoroughly until the sweeteners are fully incorporated, creating a rich, uniform base.
    Take your time mixing to ensure the almond butter is smooth and no oil separation remains.
  • Incorporate Almond Flour Gradually: Add ½ cup (50g) of almond flour to the sweetened almond butter mixture.
    Stir gently until fully blended.
    Check the texture — if the mixture feels too soft or sticky, add an additional ¼ cup (25g) of almond flour gradually.
    The goal is a dough-like consistency that can be rolled into balls without sticking or crumbling.
  • Add Flavor Enhancements: For added depth, stir in 1 teaspoon of cinnamon if desired.
    Cinnamon complements the nutty flavor while adding a warm, aromatic note.
    Ensure it is evenly distributed throughout the mixture.
    This step is optional but highly recommended for enhancing flavor.
  • Form the Almond Butter Balls: Once the mixture reaches the desired consistency, take small portions (about 10–12 grams each) and roll them gently between your palms to create smooth, uniform balls.
    Place each ball onto a parchment-lined baking sheet.
    This recipe should yield about 25 balls, depending on size.
    Be consistent to ensure even cooking and coating later.
  • Prepare Chocolate Coating: Measure 2.3 oz (70g) of sugar-free chocolate, or your preferred alternative.
    Chop into small pieces for even melting.
    Place in a microwave-safe bowl or double boiler.
    If microwaving, heat in 30-second intervals, stirring between each to prevent burning.
    If using a double boiler, stir continuously until fully melted.
    The chocolate should be smooth and glossy.
  • Coat the Almond Butter Balls: Using a spoon, dip or pour melted chocolate over each almond butter ball until fully coated.
    Ensure an even layer of chocolate to enhance flavor and texture.
    Place coated balls back onto the parchment-lined baking sheet.
    This process will add approximately 2 grams to the weight of each ball.
  • Chill to Set: Transfer the baking sheet to the refrigerator and allow the balls to chill for at least 20 minutes, or until the chocolate coating hardens completely.
    This step is essential for achieving the right texture and ease of storage.
  • Serve and Store: Once set, transfer the almond butter balls into an airtight container.
