Ingredients
  

  • 4 large eggs
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 teaspoons olive oil divided
  • 4 slices bread of choice
  • ½ hass avocado thinly sliced
  • 4 slices cheddar cheese
  • 1 medium tomato thinly sliced
  • 2 tablespoons mayonnaise

Instructions
 

  • Prepare Eggs for Scrambling: Start by cracking all four eggs into a medium-sized mixing bowl.
    Add a pinch of kosher salt and freshly ground black pepper to season.
    Using a whisk or fork, beat the eggs vigorously until the yolks and whites are fully combined and slightly frothy.
    This aeration step ensures your scrambled eggs will be light, fluffy, and tender.
    Set the bowl aside for easy access when cooking.
  • Heat Skillet for Scrambled Eggs: Place a non-stick skillet over medium-low heat.
    Allow the pan to warm for about 1–2 minutes.
    Add 2 teaspoons of olive oil, swirling the pan to coat the surface evenly.
    Properly heating the pan before adding eggs helps prevent sticking and ensures a smooth, creamy texture.
  • Cook the Scrambled Eggs: Pour the beaten eggs into the preheated skillet.
    Using a silicone spatula, gently stir the eggs in slow, circular motions.
    Scrape the bottom of the pan frequently to prevent burning, allowing the eggs to cook evenly.
    Continue cooking until the eggs are softly set but still slightly glossy—avoid overcooking, as eggs will continue to cook a bit after removing from heat.
    Transfer the scrambled eggs to a plate and set aside.
  • Prepare Bread and Toppings: While the eggs are cooking, arrange all four slices of your chosen bread on a clean chopping board.
    Slice the avocado thinly and the tomato into even slices.
    Gather the cheddar cheese slices and mayonnaise.
    Having all ingredients prepped in advance ensures an efficient and smooth assembly process.
  • Assemble the First Sandwich Layer: Take one slice of bread and layer it with half of the avocado slices, ensuring they cover the bread evenly for a creamy base.
    Place a slice of cheddar cheese on top of the avocado.

    Add a second slice of cheddar on top of the eggs for extra gooeyness.
    Finally, arrange tomato slices over the cheese layer and top with a second slice of bread to complete the sandwich.
  • Assemble the Second Sandwich: Repeat the same process with the remaining bread, avocado, cheese, scrambled eggs, and tomato slices to create the second sandwich.
    Ensuring consistency between sandwiches makes them equally satisfying and visually appealing.
  • Spread Mayonnaise on Bread Exterior: Using a small knife or spatula, spread 1 tablespoon of mayonnaise on the outer side of each sandwich slice.
    This step adds a golden, crisp crust when toasted and enhances the flavor with a subtle creamy tang.
  • Toast the Sandwiches to Perfection: Heat a heavy-bottom skillet over medium-low heat.
    Carefully place the sandwiches in the skillet.
