  • 4 Tbsp olive oil
  • 2 Tbsp coconut sugar
  • ¾ tsp ground cinnamon
  • ½ tsp allspice
  • ¼ tsp salt

  • Prepare Baking Surface: Line a cookie sheet or jelly roll pan with parchment paper to prevent sticking and ensure even baking.
    Lightly spray the parchment with a nonstick cooking spray.
    This will help the bagel slices crisp evenly without sticking to the pan, making cleanup much easier.
  • Preheat Oven: Set your oven to 250°F (120°C).
    Preheating at a low temperature ensures the bagel slices bake slowly, allowing them to dry out and crisp up perfectly without burning.
    Low-and-slow baking is key to achieving that crunchy texture.
  • Mix Cinnamon Sugar Seasoning: In a small bowl, combine coconut sugar, ground cinnamon, allspice, and salt.
    Whisk thoroughly until all ingredients are evenly distributed.
    This spice mixture will coat the bagels with a sweet, warm flavor and a hint of spice.
    Set aside for easy access during baking.
  • Slice the Bagels: Take your gluten-free cinnamon raisin bagels and slice each one into 6 thin, even rounds using a sharp knife.
    Aim for slices that are about ¼ inch thick so they bake uniformly and crisp properly.
    Lay the slices flat on the prepared baking sheet in a single layer.
  • Brush with Olive Oil – First Side: Using a pastry brush, lightly coat the top side of each bagel slice with olive oil.
    This helps the seasoning adhere and promotes a golden, crispy finish while adding healthy fats.
    Make sure each slice has an even, thin layer of oil.
  • Sprinkle Seasoning – First Layer: Evenly sprinkle half of the prepared cinnamon sugar mixture over the oiled side of the bagel slices.

  • Flip Bagel Slices: Remove the baking sheet from the oven and carefully transfer the slices to a cooling rack for a brief pause.
    Using a spatula, flip each bagel slice so the unbaked side is now facing up.

  • Brush with Olive Oil – Second Side: Lightly brush the freshly flipped side with the remaining olive oil, making sure to coat evenly.
    This second layer of oil helps the remaining seasoning stick and adds extra crispiness.
  • Sprinkle Seasoning – Second Layer: Sprinkle the remaining cinnamon sugar mixture over the oiled side of each bagel slice.
    Press gently to adhere the sugar and spice evenly across each slice for maximum flavor.
  • Bake Second Side: Return the baking sheet to the oven and bake for an additional 15 minutes.
    Keep a close eye toward the end to prevent over-browning.
    This final bake ensures that the bagel chips are golden, crisp, and fully dried out, making them ideal for snacking.
  • Cool Completely: Remove the bagel chips from the oven and allow them to cool completely on a wire rack.
    Cooling is essential as it lets the bagel slices harden into crunchy chips.
    Do not skip this step—warm chips may be slightly soft and lose their crispness.
  • Store or Serve: Once cooled, store the bagel chips in plastic sandwich bags or an airtight container.
