To Make Alfredo Sauce:

  • 1 cup fresh cream or ½ cup cream + ½ cup milk
  • ½ cup Parmesan cheese grated
  • ¼ teaspoon black pepper
  • Pinch of nutmeg
  • 1 tablespoon fresh parsley finely chopped
  • Pasta cooking water as needed
  • Salt to taste

Instructions
 

  • Prepare the Pasta Water: Start by pouring 5 cups of water into a large saucepan.
    Place it over medium-high heat and bring it to a rolling boil.
    Adding salt at this stage is important—it seasons the pasta from the inside out, enhancing the flavor of your dish.
    Use about a teaspoon of salt or adjust according to your taste.
  • Cook the Fettuccine Pasta: Once the water is boiling, add 226 grams (about ½ pound or 8 ounces) of fettuccine pasta.
    Gently push the pasta with a ladle or spoon from the sides of the pot so it’s fully submerged in water.
    Maintain a medium flame to ensure even cooking.
    Stir occasionally to prevent sticking.
    Cook until the pasta is al dente, meaning it should be firm with a slight bite.
    This will ensure the noodles hold up perfectly when tossed in the creamy sauce.
  • Drain and Reserve Pasta Water: Once the pasta is cooked to your liking, drain it using a colander.
    Carefully reserve at least a cup of the starchy pasta water—this will be used later to adjust the sauce consistency.
    Rinse the pasta lightly under warm water to prevent further cooking, then set it aside in a bowl.
  • Melt Butter in Pan: Take a large skillet or frying pan and add 2 tablespoons of butter.
    Place the pan over medium heat and let the butter melt completely, spreading it evenly across the surface.

  • Season the Sauce: Enhance the flavor of your Alfredo sauce by adding ¼ teaspoon of black pepper, a tiny pinch of nutmeg, and salt to taste.
    Stir well to incorporate the seasonings evenly.
    The nutmeg adds a subtle warmth that elevates the richness of the sauce.
    Taste and adjust as necessary to suit your preference.
  • Combine Pasta and Sauce: Add the cooked fettuccine pasta directly into the skillet with the Alfredo sauce.
