Ingredients
  

  • 90 g 3 scoops PlantFusion vanilla bean protein powder
  • 50 g ½ cup old-fashioned rolled oats (gluten-free if needed)
  • 9 g 1 tbsp poppy seeds
  • 7 g ½ tbsp Truvia or preferred granular sweetener
  • 1 tsp freshly grated lemon zest about 1 medium lemon
  • 90 mL 6 tbsp freshly squeezed lemon juice (about 2 medium lemons)
  • 90 mL 6 tbsp water

Instructions
 

  • Gather Your Ingredients: Before starting, make sure all ingredients are measured and ready.
    Use a digital scale for accuracy—especially for protein powder and oats—to ensure the texture turns out perfectly.
    Have your lemon, sweetener, poppy seeds, water, and protein powder on the counter.
    Also, prepare your equipment a large mixing bowl, a microplane or grater, measuring cups and spoons, a spoon or spatula, and a Tupperware or airtight container for storage.
  • Zest the Lemon: Using a microplane or fine grater, carefully zest one medium lemon.
    Focus on the yellow part of the peel only, avoiding the white pith underneath, which is bitter.
    This zest will provide a fresh, aromatic burst of lemon flavor that complements the sweet and nutty notes in the energy bites.
    Set the zest aside in a small bowl.
  • Juice the Lemons: Cut two medium lemons in half and squeeze out the juice.
    Measure exactly 6 tablespoons (90 mL) of lemon juice for consistency.

    The mixture should become sticky but manageable—if it’s too wet, sprinkle in a little extra protein powder; if it’s too dry, add a teaspoon of water at a time until the mixture holds together.

    It should be moldable without crumbling or being overly sticky.

    This step ensures uniform texture for all 28 bites.
  • Shape Into Bites: Using clean hands or a small cookie scoop, roll the mixture into approximately 28 small, even spheres, about 1 inch in diameter.
    Press gently to smooth each ball, making sure there are no cracks.

  • Arrange for Storage: Place each energy bite in a single layer inside a Tupperware or airtight container.
    Avoid stacking while fresh to prevent sticking.
