Ingredients
  

  • 2 pieces naan or flatbread
  • cup hummus
  • ¼ cup olives chopped
  • ¼ cup red onion roughly chopped
  • ¼ cup artichoke hearts chopped if desired
  • ¼ cup roasted red peppers chopped
  • ¼ cup feta cheese crumbled (reserve half for topping after baking)
  • ¼ cup mozzarella cheese or vegan cheese alternative
  • 2 Tbsp fresh parsley chopped
  • 2 Tbsp balsamic glaze

Instructions
 

  • Prepare the Oven: Begin by preheating your oven to 425°F (220°C).
    A properly heated oven ensures the flatbread becomes crisp around the edges while the cheese melts evenly.
    Line a baking sheet with parchment paper or lightly coat it with nonstick spray to prevent sticking and to make cleanup easier.
  • Gather and Prep the Vegetables: Take a few minutes to prepare your toppings.
    Roughly chop the red onion into small bite-sized pieces so it softens quickly in the oven.
    Drain and chop the olives for a salty, briny bite.
    Slice or chop the roasted red peppers into strips or small chunks, depending on your preference.
    If the artichoke hearts are large, cut them into halves or quarters for more even distribution.
    Having all the toppings prepped before assembly makes the layering process smooth and stress-free.
  • Build the Base Layer: Place the naan or flatbread on the prepared baking sheet.
    Spread a generous layer of hummus evenly over each piece, reaching all the way to the edges.
    This will act as a flavorful base sauce, adding creaminess while keeping the flatbread moist.

  • Add the Cheese Foundation: Sprinkle mozzarella cheese evenly over the hummus-covered flatbreads.

  • Layer the Colorful Toppings: Now it’s time to build the flavors.

    Spread them out evenly so every bite has a mix of savory, tangy, and sweet notes.
    Finish by sprinkling half of the crumbled feta cheese over the vegetables.
    Save the remaining feta for after baking—it adds a fresh, creamy contrast to the warm toppings.
  • Bake to Golden Perfection: Transfer the baking sheet to the preheated oven.
    Bake for 12–15 minutes, or until the edges of the flatbread are golden brown and crisp, and the cheese has fully melted.
    Keep an eye on the flatbread toward the end of baking to prevent over-browning, as ovens may vary slightly in heat.
    The aroma of roasted vegetables and bubbling cheese is your cue that it’s almost ready.
  • Finish with Freshness and Flavor: Carefully remove the flatbreads from the oven and let them cool for a minute or two so the toppings can settle.
    Drizzle each flatbread generously with balsamic glaze, which adds a tangy-sweet finish that ties all the flavors together.
    Sprinkle on the remaining feta cheese for extra creaminess, then top with a handful of freshly chopped parsley for a bright, herbaceous touch.
  • Slice and Serve: Using a sharp knife or pizza cutter, slice the flatbreads into wedges or squares, depending on whether you’re serving them as a main dish or appetizer.
    Serve immediately while warm and crisp for the best texture and flavor.
