  • Preheat the Oven for Perfect Roasting: Begin by setting your oven to 400°F (200°C) to ensure it reaches the ideal temperature while you prepare the potatoes.
    Preheating allows the potatoes to cook evenly and develop that signature golden-brown, crispy exterior.
  • Prepare the Potatoes for Roasting: Take 3 pounds of red potatoes and rinse them thoroughly under cold water to remove any dirt or residue.
    Pat them dry with a clean kitchen towel to prevent excess moisture, which can make the potatoes steam rather than roast.
    Carefully quarter each potato, cutting them into even pieces so they cook uniformly.
  • Combine Potatoes with Flavorful Ingredients: Place the quartered potatoes into a large mixing bowl.
    Add ¼ cup of olive oil to coat the potatoes, ensuring they roast beautifully.
    Mince 8 cloves of garlic finely and add them to the bowl, along with ¾ cup of grated Parmesan cheese.
    Sprinkle in salt and freshly ground black pepper to taste.
    Use a rubber spatula or a large spoon to gently toss the potatoes until each piece is evenly coated in oil, cheese, and seasoning.
  • Arrange Potatoes on a Baking Sheet: Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
