Equipment

  • 1 large mixing bowl
  • 1 Baking sheet
  • 1 sharp knife
  • 1 cutting board
  • 1 tablespoon measuring spoon

Ingredients

For the Bruschetta Topping:

  • 2 cups cherry or grape tomatoes sliced
  • 2 cloves garlic minced
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • cup fresh basil chopped
  • Salt and pepper to taste
  • Balsamic glaze optional for drizzling

For the Toasted Baguette Slices:

  • 1 large whole wheat baguette sliced into 1/2-inch slices
  • 2 tablespoons olive oil for brushing
  • 1 clove garlic halved

Instructions

  • Preheat the Oven for Perfect Toasting: Begin by preheating your oven to 400°F (200°C).
Ensuring the oven reaches the right temperature is crucial for achieving baguette slices that are perfectly golden and crisp on the outside while still slightly tender inside.
Place a rack in the center of the oven for even heat distribution.
  • Prepare Fresh Tomato Mixture: Take 2 cups of cherry or grape tomatoes and slice them into halves or quarters, depending on size.
Transfer the tomatoes into a large mixing bowl.
Add 2 cloves of freshly minced garlic, which will infuse the tomatoes with a gentle aromatic punch.
Drizzle 1 tablespoon of high-quality extra-virgin olive oil and 1 tablespoon of balsamic vinegar over the tomatoes, then sprinkle in 1/3 cup of freshly chopped basil.
Season generously with salt and pepper to taste.
Gently toss everything together until all ingredients are evenly coated, and set aside for at least 5–10 minutes to allow the flavors to meld beautifully.
  • Slice the Baguette: Take a large whole wheat baguette and cut it into 1/2-inch thick slices.
Aim for uniform thickness so that each piece toasts evenly.
You should end up with roughly 16 slices, depending on the baguette size.
  • Brush Baguette with Olive Oil: Place the slices on a baking sheet, spacing them slightly apart.
Using a pastry brush or the back of a spoon, lightly brush each slice with 2 tablespoons of olive oil on the top side.
This ensures the bread develops a golden, crunchy exterior while baking.
  • Toast the Baguette Slices: Place the prepared baking sheet in the preheated oven.
Toast the slices for 8–10 minutes, or until they are lightly golden and crisp.
Keep a close eye during the last few minutes to prevent over-browning.
For extra even crispness, rotate the baking sheet halfway through the cooking time.
  • Rub Garlic on Toast: Once the baguette slices are toasted, remove them from the oven.
Take 1 clove of garlic, cut in half, and gently rub the cut side across the warm surface of each slice.
This imparts a subtle, fragrant garlic flavor without overwhelming the freshness of the tomato topping.
  • Assemble the Bruschetta: Using a spoon, carefully place a generous amount of the marinated tomato mixture onto each toasted baguette slice.
Be mindful not to overload each piece, as it can make the bread soggy.
Ensure that the tomatoes, basil, and garlic are evenly distributed for a visually appealing and flavorful bite.
  • Add Optional Balsamic Glaze: For an extra layer of flavor and a beautiful finishing touch, lightly drizzle balsamic glaze over each bruschetta slice.
The sweet tang of the glaze complements the acidity of the tomatoes and the richness of the olive oil, creating a balanced and delightful bite.
  • Serve and Enjoy Immediately: Arrange the bruschetta on a serving platter and serve immediately while the baguette is still crisp and the tomatoes are fresh.
This dish is best enjoyed right away to maintain the perfect combination of crunchy bread and juicy tomato topping.
It pairs wonderfully with grilled chicken, fresh salads, or as a standalone appetizer at any gathering.
  • Storage Tips for Leftovers: If you have any leftover tomato mixture, store it in an airtight container in the refrigerator for up to 2 days.
The toasted baguette slices can be stored separately in a sealed bag to maintain crispness.
Reassemble just before serving for the freshest taste.

Notes

  • Always use fresh, ripe tomatoes for the juiciest and most flavorful bruschetta. Cherry or grape tomatoes work best due to their natural sweetness and firm texture.
  • Let the tomato mixture marinate for at least 5–10 minutes to allow the flavors of garlic, basil, and balsamic to meld perfectly.
  • Brush the bread lightly with olive oil to achieve a golden, crunchy texture without making it greasy.
  • Rubbing garlic on the toasted bread adds subtle aroma and depth, but don’t overdo it; one rub per slice is enough.
  • Serve immediately after assembling for the best texture, as the bread will start to soften if left too long.
